Recipe: French Toast

I despise soggy, mushy french toast. The basic recipe that you think you know is anything but basic. It should almost be a crepe coated bread.

2 eggs
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon (or to taste)
3 tablespoons flour
pinch of salt
6 slices of bread, any kind you like
Beat the eggs then add the remaining ingredients and beat until well mixed. Dip each slice until lightly coated and cook in a skillet over medium heat until golden brown on each side. Serve.
Personally I prefer using a loaf of french bread, cut into slices that have air dried just slightly, about 15 mins before you start cooking. It cooks up firmer and doesn’t soak up as much of the egg mixture.
These will freeze very nicely and can be reheated in the microwave, tasting almost like fresh. From time to time I will use a very small loaf of bread so I can stick these in my bento boxes…they fit beautifully.
